The Commissary Cook is responsible for the preparation and cooking of high-volume food batches for restaurants, catering, and food trays. The role involves following standardized recipes, maintaining quality, and ensuring food safety and cleanliness in a central kitchen environment.
Key Responsibilities:
1. Food Preparation & Cooking
Prepare meats, vegetables, sauces, soups, and other dishes according to batch recipes
Operate commercial kitchen equipment (e.g., tilting pans, burners, food processors)
Ensure consistent taste, portion, and presentation of all food items
2. Inventory and Documentation
Ensure proper use and recording of raw ingredients
Report shortages, spoilage, or inconsistencies to the Kitchen Head
Follow FIFO (First-In, First-Out) stock usage
3. Hygiene & Sanitation
Maintain cleanliness of assigned station, tools, and equipment
Observe strict compliance with food safety protocols and hygiene standards
Participate in scheduled deep cleaning and sanitation procedures
4. Coordination & Teamwork
Work closely with Line Cooks, Butchers, Packers, and Kitchen Aides
Support food packing and dispatch when needed
Communicate clearly with kitchen leads regarding daily tasks and progress
Qualifications:
Graduates of Culinary Arts or related training.
With or without work experience.
Can follow recipe standards and scale recipes based on volume requirements
Physically fit and able to work in a fast-paced kitchen environment
Willing to work early mornings, weekends, and holidays
Compensation:
Base Salary: ₱16,900
