Research and Development Chef

AIKON Food Corporation is looking for a Research & Development Chef to lead food product development, recipe standardization, and culinary innovation for our commissary-supported brands and catering operations.

This role is focused on the food side only — creating and improving products that are scalable, cost-efficient, and consistent. The role works closely with the Commissary Manager, who is responsible for daily production operations and commissary execution.

We are looking for a chef with a strong balance of culinary creativity + technical discipline (food costing, gram-based recipes, yields, and standardization).


Salary

  • Base Salary: ₱45,000 – ₱55,000 per month 

  • Performance-Based Incentives

Note: Incentives are performance-based and are not guaranteed fixed pay.


Key Responsibilities

1) Product Innovation & Development

  •  Lead end-to-end product development from concept → kitchen trials → pilot → final recipe approval

  • Develop new menu items, line extensions, and commissary-ready products aligned with brand direction

  • Translate culinary concepts into commercially viable products suitable for scaling

2) Recipe Standardization & Scalability

  • Create gram-based standardized recipes for commissary and branch execution

  • Define batch sizes, portions, prep methods, and product specifications

  • Ensure recipes are replicable and consistent across locations

3) SKU Improvement & Reformulation

Reformulate existing SKUs to improve:

  • food cost performance

  • yield

  • consistency

  • ingredient efficiency

  • operational simplicity (from a recipe/formulation standpoint)

Recommend ingredient alternatives or formulation adjustments during price fluctuations while maintaining quality

4) Food Costing, Yield & Product Margin Support

  • Engineer products to meet target food cost percentages

  • Validate true yield, edible portion, and batch costing

  • Build accurate costing sheets for new and revised products

  • Work with Finance and Purchasing on ingredient pricing impacts and reformulation options

5) R&D Documentation & Product Governance

Build and maintain complete product development files, including:

  • standardized recipes

  • costing sheets

  • yield tests

  • portion specifications

  • process notes

  • pilot test records

  • version history / revisions

Maintain structured documentation for product approval and rollout readiness

6) Product Handoff & Culinary Rollout Support

  • Conduct product handoff and culinary training for commissary/branch teams

  • Support pilot and rollout phases by gathering recipe-related feedback

  • Refine products based on test and rollout feedback while preserving standards


Minimum Qualifications

  • Bachelor’s degree in Culinary Arts, HRM, Food Technology, Nutrition, or related field (preferred)

  • 4–7 years total culinary experience

  • 2–4 years experience in R&D / product development / test kitchen / commissary standardization (restaurant group, catering, QSR, cloud kitchen, commissary, or food manufacturing)

  • Strong experience in:

recipe development and standardization

food costing

yield testing

portion control

batch scaling

  • Can create gram-based recipes and accurate batch formulas

  • Strong documentation and file management skills (Excel / Google Sheets / recipe files)

  • Strong communication and collaboration skills (Operations, Finance, Purchasing, Kitchen teams)


Preferred Qualifications

  • Experience in multi-brand or multi-branch food businesses

  • Experience supporting commissary + catering operations

  • Proven track record in SKU reformulation and margin improvement

  • Experience in pilot testing and product rollout support
